Life changed tonight. Had a new version of fish jerky. Brilliant.

Even better than 2rods' beef jerky :shock: :shock: :shock:

Trying to get the recipe - will report back.

Nothing wrong with high-protein eskie water unless it gets warm :grin:

The fish jerky is not my recipe, but I am going to ask for it.

Now, perhaps you can't really compare beef jerky and fish jerky - so I might have been a little out of line with the comment about 2rods' jerky - but I am trying to get the message across that this fish stuff is goooooood. Especially with icy beer :mrgreen:

And you don't even notice the bait smell on your fingers :smile:

It is covered in a paste, so maybe it's not technically jerky.

Might have to test it at the next FFF bash.

hi Pecheur, what did you think of the queeen fish you caught a few weeks ago. Most of the locals regard them as a throw back fish, but if you liked it they may be suitable for jerky??

Hi Drifter,

I actually really like Queenfish, raw marinated in lime, cooked in the woke, midwater/mid wine, boiling and the fish trown in it. Or simply in the oven.
I do the raw version, and my wife do all the cooked versins...

So yes that actually why I was wondering if you could make it in a jerky version...

Ihave not tried it because i don't eat fish, but i have heard it is OK

Stir the beer and Yoshida's together in a glass dish or bowl. Add the fish filets and gently mix to cover the fish completely with the marinade. Cover the dish with lid or plastic wrap and refrigerate for 24 hours. Mix gently at least twice during the 24 hours for even marinading.
Prepare your home smoker dehydrator for use Place the filets skin-side down on lightly oiled racks in the dehydrator If they are 3/8' thick, cook for 6-8 hours.. If thinner, cook for less time, if thicker, cook for more time..
Remove from dehydrator and cool in a paper bag or clean cardboard box. Warm fish jerky will sweat and possibly spoil if sealed in plastic or glass before it is cooled.
Yoshida’s get from asian or Dele isle (JAPANESE) ITHINK YOU KNOW WHERE TO FIND THE BEER.

Crikey, I forgot all about this one.

The "fish jerky" was made of tiny dried fish, possibly whitebait, covered in a sauce, possibly tamarind-based.

I can't remember where I had it, so I can't get the recipe. Must have been a good night. If the fog clears I'll post more.
